Peppermint Bark – Delicious Holiday Recipe

Peppermint bark is a GREAT dessert for any occasion! Whether it’s the winter season or you just down-right need some minty chocolate in your life, peppermint bark is an easy, no-bake concoction.

I first made peppermint bark in college, upon request. I had no idea how to make it, so I looked up a quick recipe online. This was at least 6 years ago now, but man, did it turn out good!

I melted white chocolate chips in the microwave, sprinkled some crushed peppermint candies on top, and BAM! I was finished.

Now that I’m so much older and wiser (yeah, right), I understand that adding just a few more ingredients (and LOVE) to the mix makes it EVEN BETTER! High-quality chocolate and peppermint extract really evens out the taste and texture.

  • Two medium, heat-safe bowls

It might look like there’s a lot of steps below, but I promise – it’s easy!

Instructions

1) Line baking tray with parchment paper. Rip and size accordingly.

2) Remove chocolates from packaging, and break into small pieces. Break these into quarter pieces of chocolate. Place white chocolate pieces in one bowl, dark chocolate pieces in the second bowl.

3) Melt 8 oz. of white chocolate in microwave. Melt these in 25 second increments, four times. Mix the chocolate each time you take the bowl out of the microwave so it doesn’t burn or stick to the bowl.

4) Once the chocolate melts completely, mix 1/4 teaspoon of peppermint extract.

5) Pour the white chocolate onto the baking tray. Spread the white chocolate using a spatula. This is where you can “shape” the peppermint bark. In my case, I flattened out the white chocolate into a rectangular shape for a thin layer. You can also shape the white chocolate into a square for thick peppermint bark.

6) Place baking tray in refrigerator for 12 minutes. Allow it to settle / harden. Remove baking tray and place on counter.

7) Melt ALL of the dark chocolate in the microwave in 25 second increments, four times. Mix the chocolate in between microwaving.

8) Once the dark chocolate melts completely, add 1/4 teaspoon of peppermint extract to the dark chocolate.

9) Pour dark chocolate in baking tray on top of the hardened white chocolate. This will serve as the peppermint bark’s second layer.

10) Place the baking tray in the refrigerator, and allow the chocolate to cool again for 12 minutes.

11) While the chocolate is hardening, crush (or smash) the peppermint candies. I recommend taking out half the bag (7 oz) of peppermint candies in a small, plastic bag, and then place a towel underneath the bag to ensure the candy doesn’t seep through the bag.

12) Using a hammer, smash the peppermint candies. This will take two minutes, tops. Keep peppermint candy in the plastic bag for the next few steps.

13) Remove the baking tray from refrigerator and place on counter.

14) Melt the last bit of white chocolate (6 oz) in the microwave, four times, in 25 second increments, mixing the chocolate each time.

15) You won’t need to add peppermint extract this time around. Simply mix the white chocolate and spread out on top of the dark chocolate. This is the final layer!

16) Then, sprinkle the crushed peppermint candies on top of the white chocolate, and voila! You have your peppermint bark!

17) Finally, let the bark cool in the refrigerator. There’s no set time here – it could take 10 – 15 minutes, so use your best judgement. The bark and peppermint candies needs to harden in the refrigerator.

18) Take out the tray and allow it to sit at room temperature for 5-10 minutes.

19) Cut the finished peppermint bark with a knife, and serve the chocolatey, minty-fresh dessert!
